Sweet Curry Madras

Flour and brown seitan (chicken-style seitan is soy-free).

Slice an onion into half rings. Sautee them in olive oil. Add a diced clove of garlic if you wish. Then add...

  • 3 cups stock
  • 1-2 Tb curry powder
  • 2 Tb mango chutney
  • 1 tsp powdered ginger
  • 1 tsp salt
  • 1 cup almonds
  • 1 cup raisins
  • 1-4 sliced apples (peeling them may be advised)

And cook until apples are soft. Add the seitan.

In another pan, heat 1 cup rice milk and 2-4 Tb almond butter together. Add to main dish.
